Growing Eggplants

Aubergines or 'Eggplants' are a favorite in Indian, Egytptian, Greek (moussaka), Italian and French (ratatouille) Cuisine. Yes some eggplants do look like eggs, especially the small white ones, however most are a purple color. Eggplants are sun loving and prefer a well drained humus rich soil. Plant after any risk of frost has passed, although you may start them as seedlings in a greenhouse or cold frame.

Moussaka
One of the best know recipies that uses eggplants is the Greek classic Moussaka.
Also look at Baba ghanoush, a great Middle eastern dip.
Eggplant Pizza is a a good alternative to meat.
Eggplant Lasagne, especially with roast pumpkin is fantastic.
Ratatouille is a French classic from Provence using onions, tomatoes, egglants and peppers.
